Dr Vikki Petersen featured in new Gluten-free Cookbook
Dr Vikki Petersen was asked to write the forward for a brand new cookbook entitled “Simply…Gluten-free Desserts” by Carol Kicinski.
The author has been a long-time patient and was initially diagnosed with her gluten sensitivity by Dr Petersen.
Carol is an amazing chef with a knack for making her recipes fun and fool-proof. She adapted to her gluten-free diet so well that she wanted to share her success with others.

Dr Vikki Petersen Featured in The Swedish Journal on Nutritional Therapy and Functional Medicine

The Swedish Journal on Nutritional Therapy and Functional Medicine publishes the latest scientific findings and best practices in the field. The journal is committed to the integration of conventional medicine and complementary/alternative medicine with an emphasis on prevention and lifestyle changes.
The journal is printed six times per year and is intended for the Swedish community of medical practitioners, therapists and researchers, as well as for a broader public interested in nutrition and functional medicine.
In this issue, Feburary 2011, Dr Vikki Petersen’s article on “Gluten, Glutamate & Neurological Disease” was published after the journal contacted Dr Petersen and asked for permission to print her views on the topic.

2010 Gluten Sensitivity & Celiac Forum
Dr Vikki Petersen is a keynote speaker
At the second annual Gluten Sensitivity & Celiac Forum, four experts shared their vast knowledge of the rapidly evolving field of celiac disease and gluten sensitivity.
The data presented was cutting edge. From decreasing your risk of autoimmune disease and normalizing hormones, to improving neurological problems and enhancing life expectancy, the experts enlightened the audience on the most recent advancements in the field.
Each of the four presentations covered a different aspect of health, lifestyle and testing methods in an easy to understand, entertaining format.

Dr Vikki Petersen Featured in “Better Homes and Garden” Magazine
The July issue of “Better Homes & Garden” has hit news stands across the country and Dr Vikki Petersen is featured in an article!
The article is called “Gluten’s Laws”. It is very exciting as our work on gluten sensitivity has officially hit the national stage by being published in the third largest magazine in the country.

Dr Vikki Petersen was interviewed by Dr. Osborne on the topic of gluten sensitivity. The interview was hosted by Gluten Free Society, a website that educates patients and doctors about gluten.

Dr. Peter Osborne is the clinical director of Town Center Wellness in Sugar Land, TX (just southwest of Houston). He is a doctor of chiropractic medicine and a Board Certified Clinical Nutritionist. He is an expert in orthomolecular and functional medicine. He has been practicing since 2001. His clinical focus is the holistic natural treatment of chronic degenerative diseases.

Dr Petersen’s Findings Are Used to Create University Nutrition Course
Hawthorn University uses Dr Petersen’s book, “The Gluten Effect”, as the foundation for their new course entitled: “Understanding Gluten Intolerance and Preventing Celiac Disease”.
What is Hawthorn University? Hawthorn offers online holistic health education and nutrition programs. They promote a respectful dialogue with health providers and present a broad discourse in the current scientific and alternative approaches to nutrition.
After reading “The Gluten Effect” and interviewing Dr Vikki Petersen, Hawthorn’s Director of Doctoral Studies and the Educational Director created the course “Understanding Gluten Intolerance and Preventing Celiac Disease”.
We are proud to have received this honor and recognition of the value of “The Gluten Effect” for clinicians in training.
